Interview with Aurel Bachmann, Managing Director of Confiserie Bachmann

Aurel, you are producing original Basler Läckerli, which are among the best in the city of Basel. What is your secret recipe?

Part of our secret recipe is that we only produce our Basler Läckerli with first-class ingredients. This includes, for example, genuine blossom honey. We then bake our Läckerli very slowly, because this is the only way to make them beautifully tender and soft. The hand-applied, double-sided glaze with the typical cloud pattern is another speciality of the house. This sugar glaze not only tastes fine, it also contributes to less air getting into the Läckerli, which is what keeps our Läckerli fresh for longer. The Läckerli are cut with a machine from the 50s that still works (laughs). It’s unbelievable.

How many Basler Läckerli do you produce per week?

The production procedure is very complicated, and it is therefore clear that we have our hands full producing 100 kg of Original Basler Läckerli per week. We don’t want to produce mass but practice solid and traditional handcraft that is noticeable on the palate.

We rather produce less at once, but in top quality. There are no shortcuts. If you change only one component of this magic formula, the whole system collapses, and the quality suffers. We want to avoid that.

You now produce many different varieties of Basler Läckerli. Which variety is most popular among your costumers?

These clearly are the chocolate Läckerli. My father invented them in 1982. That’s why they were often copied, you have to say. These Läckerli are also produced by hand. In the case of the chocolate Läckerli, each individual Läckerli is dipped into the warm chocolate by hand. You could argue that every single Läckerli is a unique piece.

How many years have you been in the Läckerli business?

For 75 years. We are also celebrating an anniversary this year and I am grateful and proud to have been able to continue this business in the third generation since 2015.

What are your plans for the future with Basler Läckerli?

My team and I would like to work on making our Basler Läckerli better known throughout Switzerland. They may be a little more expensive than the competition, but I am convinced that the difference in quality absolutely justifies the price. We are already able to deliver Läckerlis all over the world. Of course, we are very happy about that. You can easily order original Basler Läckerli in our online shop.
